Apple Upsidedown Cake

Last night, Meredith was playing night owl and helped me make an apple cake -- one which I have been waiting nearly two weeks to do!
She pushed her step stool up and grabbed the measuring spoons, the apples, whatever she could get her little hands on....

The pediatrician did say she needed more fat in her diet....

Here are my apples waiting for the cake batter (which was delicious by the way!).....

All done and all better!

We didn't try the cake last night because I still have to put the special carmel topping on it. Richard and I will enjoy it tonight I suppose!
