I had the most delicious dinner last night. So delicious, that I am still thinking about it.
Nothing fancy - But if you know me, you know that I don't do fancy.
I like to keep it simple and keep it real....even in the kitchen. So traditional red sauced meatloaf, peas, red potatoes.
I didn't have tomato sauce, so I used a half-eaten jar of spaghetti sauce. I was worried, but worry no more....it was fantabulous.
However, I have suddenly become suspicious of my tomato craving -- see, I crave tomato things all the time.
BLT - tomato! check!
Pizza - tomato! we actually have this at least once a week....
Noodles of any kind with Spaghetti Sauce - tomato!
Ketchup - tomato!
Well, I never made the connection that there could be a reason for these cravings.
Apparently, I have an iron deficiency. I wish I had thought to look this up several weeks ago!
Not that tomatoes have iron, however, the Vitamin C helps to absorb iron in other foods.
I guess I need to go back to eating my spinach salads again....
